As the economy took a turn for the worse and the number of charter flights dwindled, brothers John and Joe Celentano faced furloughing their employees at Rudy's Inflight Catering in Teterboro. Then, they had a better idea.

They decided to transform their old storage space into a restaurant-cafeteria and redirect staff there. The fruit of their vision, Sal's Good Eats, opened in January on Green Street -- a rare eatery to open in Teterboro, which has 18 residents.
